15 Quick + Delicious Gluten Free Dinners
Bleh, meal prep. I hate it all. But, these are some tried and true healthy recipes I’ve been making for years — and I’m confident you’ll love them too! They are all gluten free (or easily with a simple noodle swap) and most are dairy free as well.
Most of these take 30 minutes or less! Let me know if you make them and what your thoughts are!

BEEF + PORK RECIPES
20 MIN BOLOGNESE
This is a fantastic and easy recipe from Paleo Running Momma — I make this with Jovial gluten free egg noodles, instead of spaghetti squash. I also add onion and garlic because I’m not following AIP.
BEST BAKED ZITI
Speaking as an Italian, I’ve eaten a lot of ziti, okay? And this is the best I’ve ever eaten. For best flavor, make the sauce up a day a head of time then simply assemble with gluten free penne and cheeses when ready to cook!
5 INGREDIENT STUFFED PEPPERS
A recipe from my mom, you can’t beat this super simple dinner that takes 5 ingredients and 30 minutes to throw together! Also dairy free, or you can top with some pepperjack if desired.
GREEK PASTA
I’ve been making this for years — takes about 30 mins and is one of my husband’s favorites.
EGGROLL IN A BOWL
This recipe has every option for every diet, including AIP. It’s paleo and whole 30, but I make regular rice with it instead of cauliflower. I tweaked the sweetness and used coconut sugar instead of stevia.
POULTRY RECIPES
CASHEW CHICKEN
One of my favorite Pioneer Woman recipes, this is done in under 20 mins and very delicious. I swap out soy sauce for coconut aminos and omit the green peppers (meh). Also dairy free.
PF CHANGS LETTUCE WRAPS
Another recipe from yours truly, this is the quickest, yet most delicious recipe you could ask for. Really try to get butter lettuce, it makes all the difference! I serve with some rice seasoned with coconut aminos. Also dairy free.
TANDOORI CHICKEN
This takes 20 minutes to pull together. I like to serve over a bed of rice and add a vegetable. Also dairy free. Quick and delicious.
CHICKEN + WILD RICE SOUP
I’ve made a lot of chicken + wild rice soups, and this is by far my favorite. I like it a little saltier, and you can easily make this dairy free by subbing the half + half with full fat coconut milk. This takes a little bit longer because wild rice has a long cooking time, but it’s worth it!
ANCHO TURKEY CHILLI
I make this often — super easy and very good. Personally, I like using beef in this better - but you can experiment with both. I omit jalapeños, and add a small can of chilis. I also use white rice instead of farro to make this gluten free! You can play around with the ancho powder, I usually swap it for chipotle chili powder.
QUINOA TURKEY BURGERS
These are delicious, but I felt needed a little extra salt. I also substituted parmesan cheese for goat cheese because I hate it. They turned out great and I made a double batch to have around for lunches. They also freeze well.
APPLE BACON CHICKEN BURGERS
I love making these in the winter as they have rosemary as a key flavor and are topped with a cranberry sauce. I make a double batch and cook them in an electric skillet to make things quicker. Also dairy free.
Vegetarian RECipes
WHITE BEAN KALE SOUP
An extremely quick recipe, I found this to be very delicious, especially with some gluten free croutons or bread. I added lots of extra salt because I mean, it’s mostly beans lol.
CACIO E PEPE
Absolutely love this dish. I don’t add the arugula, well, because I don’t like it. And I also left out the lemon because generally that isn’t in cacio e pepe. I used a gluten free thick spaghetti type noodle and it is fantastic.
roasted veggies with orzo
I substitute brown rice to keep this gluten free, and add quite a bit of extra salt to really bring out the flavors. Perfect for summertime when the veggies are in season!
